We follow trends, study professional literature, procure the equipment we need for quality processing of our wines but at the same time we stick to tradition. We believe that technology in winemaking is a great thing, but we also respect and appreciate all forms of human contribution in the long process of making wine.
Processing begins with manual harvesting in order to preserve only the best of the grapes. This is followed by grinding, pressing, cold settling of the must, controlled fermentation (14 to 16 degrees), bâtonnage (mixing the sediment with wine), aging in stainless steel barrels and finally bottling. Only Sauvignon blanc is produced without batonnage.
